Cask No. 39.244 Tutti Frutti in a Wooden Bowl, an 11-year-old whisky from the SMWS Juicy Oak & Vanilla flavour profile.

An oaky floral fruitiness surprised us all as we had difficulties describing the aroma, but we settled on a large bowl of Tutti Frutti kale salad in a citrus honey dressing served with an acacia wooden fork and spoon tongs. A great texture, mouthcoating like licking honey of a wooden dipper or the last bit of ice cream from a pop sickle but then, right at the end, chilli crept up on us with a spicy finale. Water added the lush and vibrant scent of tropical oak and flowers while the now tempered heat made it even more delicious and dangerously moreish.

Cask No. 55.78 What a Spread!, a 13-year-old rich and sweet bottling from a Speyside distillery, with tasting notes of “spiced toffee, crème brûlée and a touch of fresh oak”. Deep, rich & dried fruits flavour profile.

Exotic and tempting aromas began with burning incense and a hint of woodsmoke. We enjoyed Chinese barbecued chicken and Hoisin duck with mango chutney before plums and a Christmas cake. Sweet to taste – sherbet, molasses, tangy fruit sweets and then toasted almonds, pencil shavings and a Bellini cocktail with a hint of Angostura . With water the aromas took us outside. Leather hiking boots on fresh earth amongst Seville oranges and orchard fruits before fruitcake and nuts. The taste was rich and sweet – marmalade on toast, spiced toffee, creme brulee and a touch of fresh oak. After nine years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill American oak PX hogshead.

Cask No. Batch 15 Smokus Fruticosus, a blended malt comprised of malt whiskies from the islands of Islay & Orkney.

We imagined being in the kitchen preparing a blackberry and smoked caramelised red onion chutney while at the same time, sizzling in a wok, a pepper steak stir fry. Sweet and spicy, peppery and smoky on the palate neat, in the wok there were now some garlic shrimps, Spanish chorizo slices all seasoned with the effervescence of a spicy root beer. After the addition of water, we opened a bag of Danish sweet and salty liquorice before biting into a classic Reuben sandwich with smoked pastrami. In the grand finale, the rich cream sherry notes danced the funky chicken with the dark fruity smoky flavours.
