Whisky = water plus barley plus yeast, with distillers’ skill and careful maturation in wood. The wood matters, as does its previous uses.
With an explosion of wood conditioned ‘expressions’ in the retail market, it is worthwhile recalling the traditional whisky styles and the ‘classics’ of flavour, many of which are based on maturation in sherry casks. Sherry is often seen as the ‘forgotten apertif’, not exactly fashionable, yet delightful in its own right.
