This whisky is astonishingly mature for its age. The colour is so dark, we suspect a 1st-fill European oak cask. The nose is surprisingly mellow; reminiscent of Madeira or mulled wine (with spices), then a dried fruit complex (figs, sultanas, raisins, dates). At full strength the taste is “Oloroso sherry at 50%Vol” – sweet, tannic, warming, pleasant. Water raises sulphur, but only for a moment, then Christmas cake with dark, tannic tea: “East Friesland tea”, said one panel member; “Pu’er tea – which is black and fermented”, said another. Soft and only lightly tannic in the mouth, with traces of Seville orange oil and perhaps a hint of liquorice. The distillery on ‘Scotland’s Holiday Island’ opened in 1995.

After a brief coir matting opening, the aroma reminded us of a new house – wet plaster and plaster-board – with a light rape-seed oil note, peppercorns and mixed spice emerging after a while. The taste, unreduced, is fresh, sweet and peppery, with a thread of smoke. Water moves the nose towards cooking scents: roasting tin (with lamb shanks) fatty Cornish pasty, Scotch broth with barley… and one found nasturtiums. The taste is now soft and sweet and lightly nutty: brown rice with Gouda cheese and a flick of Soy sauce. The distillery was designed by Delme Evans and built in the early 1960s, overlooking Craighouse Bay.

Casks from this enigmatic distillery are hard to come by, and this one is a true gem. The extra kick of peat over the more regularly made style here makes this an even rarer treat.
